Chicken Parmesan

2 boneless skinless chicken breasts

2 eggs (scrambled)

1 8oz ball fresh mozzarella (sliced)

Bread Crumbs

Marinara Sauce

Olive Oil

Preheat oven to 375F.

Trim any fat from chicken breasts and slice down the middle creating two thin cutlets.

Coat frying pan with 1/4” of olive oil. Heat over medium-high heat.

Dip chicken in egg and then coat with bread crumbs.

Fry chicken in oil until it is about 85% cooked. Set aside.

Coat bottom of a baking pan with marinara sauce.

Arrange chicken in pan and top with more marinara sauce. Place a slice of mozzarella on top of each chicken cutlet (more mozzarella may be used if desired).

Bake for about 15-20 minutes or until chicken is cooked through.
